Wild Goose With Prune And Apple Stuffing

1 goose

1 quart bread crumbs

2 cups chopped prunes

2 cups peeled and chopped apples

salt

generous grating of fresh nutmeg

apple juice to moisten

Stuff goose with above ingredients.

Place goose on rack in roasting pan. Roast in 400 degree oven for 20 minutes. Pour off fat and then proceed to baste with your own choice of basting. Reduce heat to very moderate and continue to roast, allowing 20 minutes per pound.
