Wild Boar

2 pounds wild boar meat, cut into 2 inch cubes

1/4 cup flour

1 teaspoon salt

black pepper to taste

4 tablespoons bacon drippings

1 large onion, cut-up

4 small onions, whole

2 cloves garlic, minced

4 carrots, halved

4 potatoes, halved

4 cups water

1 tablespoon parsley flakes

1/4 teaspoon rosemary

Make a mixture of flour, salt and pepper. Coat wild boar meat with flour mixture. Brown meat in bacon drippings in a dutch oven or large frying pan, then add cut-up onions and garlic. Cook for five minutes. Add water, rosemary and parsley flakes, cover and cook for one to two hours until boar meat is tender. Add potatoes, carrot and small whole onions. Cook 30 additional minutes.
