Western Game Hash

1 pound ground elk

1 large onion, chopped

1 bell pepper, chopped

1 (16 ounce) can tomatoes

1 can water

1/2 cup uncooked rice or uncooked macaroni

2 teaspoons salt

1 - 2 teaspoons chili powder

1/2 cup black olives

1/8 teaspoon pepper

2-1/2 cups shredded cheese

Heat oven 350 degrees.

In large heavy skillet brown meat, onion and pepper. Drain any fat. Stir in remaining ingredients and bake in a two quart casserole dish for one hour. Cover top with two and one half cups shredded cheese for the last 15 minutes of cooking time. Serve with buttermilk biscuits and fresh fruit salad.
