Venison Scallopini #2

1-1/2 pounds venison round steak

flour seasoned with salt and pepper

4 teaspoons olive oil

2 tablespoons butter

1 clove garlic, minced

a sprinkle each, sage and thyme

1/2 cup dry sherry

1/2 cup water

salt and pepper to taste

Slice venison into Y2x4 inch servings. Pound well, coat pieces well (dredge) with flour mixture. In a heavy frying pan with lid, heat oil and butter. Add venison and brown on both sides. Add garlic, salt and pepper to taste. Sprinkle with sage and thyme. Mix sherry and water and pour over meat. Cover and bake at 350 degrees for 45 minutes to one hour till tender.

Serve over linguine pasta or mashed potatoes and please ... with a hearty burgundy.
