Tender Bear Cutlets

round steaks

1/2 cup whole wheat flour (do not substitute)

3 or more large onions

salt and pepper to taste

Trim all fat from meat. If meat is strong or from western states trim one fourth of any area that was next to skin. Cut round steak into serving size portions, pound each side to tenderize. Roll in whole wheat flour, brown both sides in oil. Cut onions in small pieces and heap on top of browned steak, simmer covered for about one hour. Add enough water so steak can simmer. Do not stir onions under steak, just let them fall around it.
