Sweet and Sour Rabbit

1 rabbit, quartered

plain bread crumbs

1/2 pound raw ham, diced

1 chorizo (Spanish sausage), diced

1/2 stalk celery, diced

1 medium onion, diced

1 tablespoon sugar

1/4 cup vinegar

1/2 cup water

12 green olives with pimentos

4 ounces capers

1 tablespoon raisins

small pinch saffron powder

Coat rabbit with bread crumbs. Place rabbit in a large casserole dish, and add all remaining ingredients. Note: dissolve sugar in vinegar prior to putting in casserole dish. Bake, covered, in 375 degree oven for approximately one hour or until rabbit is tender.
