Squirrel Creole

4 squirrels

salt and pepper to taste

2 tablespoons vegetable oil

1 cup brown rice, uncooked

1 clove garlic, minced

1 (14-1/2 ounce) cans tomatoes, chopped

1 green pepper, chopped

1 medium onion, chopped

1/8 teaspoon cayenne pepper

Season meat pieces with salt and pepper, lightly brown in oil. Combine remaining ingredients and mix well. Spoon into large casserole, arranging meat pieces on top. Cover and bake at 325 degrees oven for one and one-fourth to one and a half hours, or until meat is tender enough to easily remove from bone.
