Squirrel Cacciatore

2 gray squirrels

1/2 cup oil

1/4 cup butter or margarine

1 medium onion

2 cloves garlic, chopped

rosemary

parsley

black pepper

salt

1 (16 ounce) can tomatoes

1 tablespoon tomato paste

Cut squirrel into five sections, consisting of four legs and the back. Combine oil and butter in a good sized pot. Add onions and brown slowly. Add squirrel and brown. Sprinkle garlic, rosemary and parsley together with salt and pepper. Stir well, add tomatoes and paste. Cook slowly for about one and a half hours until done. Do not overcook. This squirrel is delicious with fresh cooked linguini on the same plate with sauce spooned over all.
