Roast Wild Duck

1 wild duck

2 tablespoons soy sauce

2 tablespoons lemon juice

2 tablespoons honey

6 strips bacon

Skin duck and trim all fat. Split duck in half, down through center of breast and back. Place duck halves "center side down" in a roasting pan or baking dish. Pierce meat with a sharp knife or fork. Sprinkle one tablespoon soy sauce and one tablespoon lemon juice on each duck half. Drip or spread one tablespoon honey on each duck half. Blanket each duck topside with three strips bacon. Put one fourth inch water in bottom of pan. Cover with lid or foil. Cook in 350 degree preheated oven for 60 minutes.
