Roast Quail

4 whole quail with skin

2 tablespoons butter

1 tablespoon Kitchen Bouquet

your favorite stuffing

Add stuffing to cavities of quail and place them breast side down in a roasting pan. Turn legs toward inside of pan so they don't cook too fast. Mix melted butter and Kitchen Bouquet, brush half the mixture on quail. Cover with wax paper and microwave on high for 12 minutes. Turn birds over. Brush on the rest of sauce. Microwave another 12 minutes until legs move freely; this is a way to check for doneness. Watch legs and wings carefully and shield with pieces of parchment paper if they start to dry out.
