Roast Partridges

4 partridges, dressed

1/2 cup chopped walnuts

1/2 cup chopped mushrooms

1 cup plain bread crumbs

1 teaspoon ground coriander

1 teaspoon nutmeg

1/8 teaspoon black pepper

1/2 cup currants

1/2 cup blackberry brandy

1/2 cup blackberries

1/2 teaspoon sage

1 teaspoon lemon juice

1 teaspoon corn starch

Clean birds well. Mix walnuts, mushrooms, bread crumbs, currants and one half teaspoon each of the following: ground coriander, nutmeg, and black pepper. Stuff birds and place in baking dish, cover with foil and bake 425 degrees for approximately 45 minutes. Remove foil during last fifteen minutes. While birds are baking, mix cornstarch in a little cold water and add brandy, blackberries, nutmeg, lemon juice and one teaspoon each (or remaining) nutmeg, coriander, and sage and heat until thickened. Pour heated mixture over birds. Serve with wild rice.
