Rabbit-Hunter's Style

1 rabbit

1 cup olive oil

1 cup diced garlic

1 cup all purpose flour

2 tablespoons dry mustard

1 teaspoon curry powder

1 teaspoon powdered thyme

2 tablespoons salt

1/2 teaspoon pepper

1 cup light cream

Cut rabbit into pieces, rub all over with olive oil and leave in a cool place overnight. The next day, rub each piece with garlic. Put flour in a bag, add mustard, curry powder, thyme, salt and pepper. Shake rabbit pieces in bag until coated, then fry in olive oil or salad oil until golden brown. Reduce heat to simmer, cover and let simmer for one hour or until tender. Pour cream over rabbit and serve hot.
