Rabbit Cacciatore

1 rabbit, quartered

1 stalk celery, cut-up

1 tablespoon capers

1 tablespoon raisins

12 green olives with pimentos

1 medium onion, diced

1 clove garlic, minced

1/4 teaspoon oregano

1 can whole tomatoes

1/4 cup sherry

vegetable oil

Cover bottom of a dutch oven or small roasting pan with vegetable oil. Put in rabbit, celery, capers, olives, raisins, onions, garlic, and oregano. Squeeze whole tomatoes over the top, add sherry, cover and bake in a preheated oven 350 degrees for about one hour, or until rabbit is tender.
