Quail Supreme

6 quail

1 can chicken broth

2 cups rice, uncooked

1 medium onion, chopped

1 cup mushrooms, sliced

1 carrot, shaved

2 tablespoons butter

3 tablespoons flour

1/2 cup milk

In a crock pot add chicken broth and quail. Add water to cover. Simmer on low for four to six hours until meat is tender and completely cooked. Remove quail and half the broth. Add rice, onion, carrot and mushroom to crock pot and cook 30 minutes or until rice is tender.

Meanwhile, de-bone quail. In a medium-sized pan melt butter over medium heat. Stir in flour, cook one minute. Add remaining broth. Stir and cook until smooth. Add milk. Cook until gravy is thickened. Spoon out rice mixture and top with quail, cover with gravy.
