Plum Good Pheasant
1 - 2 pheasants, cut in serving pieces
1 jar plum preserves
1/2 stick butter
Melt butter in frying pan and brown pheasants. Turn heat down, add a few tablespoons water, cover and cook pheasants until done. Sprinkle with salt, pepper and thyme. just before serving, add plum preserves and cover until heated through. Serve with drippings.
