Opossum And Sweet Potatoes

1 opossum, cleaned and skinned

1 large onion, quartered

1 large apple, quartered

1 tablespoon sage

salt and pepper

sweet potatoes

Trim all possible fat from opossum. Sprinkle inside and out with sage, place onion and apple inside, and lightly salt and pepper. Place in a large roasting pan, add water to pan, cover and bake in a 300 degree oven for one hour. Add sweet potatoes around opossum, cover and bake until sweet potatoes are tender. Uncover to brown opossum.
