Moose Roast - 2

2 - 4 pounds moose roast

Marinade:

1 onion, diced

1 clove garlic, diced

2 cups sherry cooking wine

1/4 teaspoon pepper

1/4 teaspoon thyme

1 package onion soup mix

red and green pepper slices

Place meat in glass or earthenware bowl. Add marinade ingredients except soup mix and pepper slices. Let stand in refrigerator 24 hours. Turn meat several times in marinade. Remove meat.

Saute roast in shallow, hot fat until brown on both sides. Place in foil-lined roasting pan. Add onion soup mix and pepper slices. Seal foil and bake in 300 degree oven for two to two and one half hours or until tender.
