Caribou Sausage

4 pounds ground caribou, trim all fat

4 teaspoons onion flakes

1 teaspoon garlic powder

1 teaspoon curry

2 teaspoons black pepper

3 teaspoons salt

2 teaspoons cumin

1 teaspoon cayenne

2 teaspoons sage

1 teaspoon thyme

1 teaspoon oregano

Mix with clean hands thoroughly, package and freeze. Thaw in refrigerator and not in the microwave for best results and cook on low temperature in a cast iron pan with cooking spray.
