Baked Wood Duck

4 cleaned and dressed woodies

3 tablespoons powdered garlic

1 tablespoon ginger

3 tablespoons parsley flakes

2 teaspoons thyme

3/4 cup soy sauce

3/4 cup white wine

1/4 cup orange juice

salt and pepper

2 apples

Put woodies in large Ziploc bags along with marinade made from next seven ingredients. Salt and pepper to taste. Refrigerate for one to two days, turning from time to time.

Preheat oven to 325 degrees. Stuff each duck with two apple quarters. Warm leftover marinade in sauce pan. Place woodies in foil lined roaster and baste with warm marinade. Bake covered about two hours. Baste frequently with warm marinade.
